In the case of GDPR it is not just for simplicity. It’s because companies that operate in the EU need to provide those protections to all EU citizens, even those across the pond. You cannot check if someone is an EU citizen so if you operate in the EU you effectively need to treat everyone like an EU citizen.
Why not have a state-run instance on an open platform? It’s better than relying on a corporation’s platform. The government is ‘the people’ more than corporations are.

Yeah it lags behind because Chromium is developed by Google, which is the 4th biggest company in the world. And Safari is obviously from Apple which is the largest company in the world. I don’t think the fact that Mozilla lags behind should upset anyone. The fact they can compete at all is impressive I think.

I don’t think it’ll ever be perfect either. The setup Lemmy has just means it’ll be more resilient to breaking down entirely because there’s no single point of failure. So yeah hopefully it stabilizes more over time.
