Go to Namecheap.com and play around with their domain generator. There’s plenty of none-ccTLD’s to choose from.
Depending on the project, you could find a gTLD that fits your project.

Also consider that Instagram uses aggressive image compression and then you import from that to Pixelfed, which also does its own compression. No wonder the quality is questionable.

Not natively in Pixelfed.
This is a setting by the admin of that Pixelfed instance. Try another instance, if you are unhappy with the quality.
Look for this, under the about page of the instance.

You can disable P2P.
You will only see content from other instances, if your instance federates with them.
However, some instances allow “global search”, which means you can practically find everything through search, from all the other instances.
It’s also possible to subscribe to channels from other instances, even though your instance does not federate with said instance.
If you go to the About > Network page, you can see which instances is federated with yours.
